Q | Do you have soup bones? I'm looking for veal bones for stock but I wonder what types if any do you have and how much do you charge? Do I need to order them in advance? |
A | Yes, we do carry bones for soup. Veal bones are $1.99/lb. (as of 2007 - price may vary). All our veal bones are from the leg. These bones make an excellent stock, and when reduced make a fine demi-glace or glace. We also carry beef marrow bones and often have chicken bones in 3 pound bags available. Note: please call ahead to be sure we have the item you need. |
Q | I need paper thin sliced beef for beef fondue, sukiyaki and shabu shabu - do you carry that? If so, what cut do you recommend? |
A | We would recommend the tenderloin and yes we do that all the time. We can slice it for you paper thin. Great for for carpaccio also. Note: please call ahead since this requres special preparation. |
