Tomato & Basil Sauce
This recipe is from Vic Territo (Fior D'Italia) who serves this sauce with Arugula and Fresh Mozzarella Ravioli. This simple tomato sauce goes nicely with many other pasta dishes as well.

2 oz. extra virgin olive oil
2 cloves garlic, bruised (crush with back of knife)
4 oz. red onion, peeled, quartered and thinly sliced

10 fresh basil leaves, chopped
1 can (35oz.) whole tomatoes (preferably imported San Marzano tomatoes)
Salt & pepper to taste

Directions: In a sauce pot, add oil and heat. Add garlic and let cook until golden brown and discard. Add onions and cook until slightly colored. Add basil and stir until blended with onions and wilted. Add tomatoes, stir and mash with a slotted spoon. Bring to a boil and lower to a simmer. Cook approximately 20 minutes. Adjust seasonings with salt and pepper.
