Slow-Cooked Wild Boar Roast

Glaze: |
1 1/2 lb. Mini Roast |
2 T. soy sauce |
1 C. water |
2 T. honey |

1/2 t. dry mustard |
|
1/2 t. cumin powder |
|
1/2 t. cayenne pepper |
|
1 T. oil |
1. Pre-heat the oven to 275° F
2. Mix all the glaze ingredients.
3. Put the roast in a roasting pan and rub it with
the glaze. Roast at 275° for 2 hours, turning meat every 1/2
hour and adding a few teaspoons of water to the pan if needed.
4. When the roast exterior is golden brown and internal
temperature reaches 165° F, remove the roast and let it rest.
5. On stovetop, add wter to pan, skim, stir and reduce
to taste.
6. Slice and serve with the sauce.
